Vegan apple crêpe
Serves: 4 Medium Sized Crêpes

Ingredients
- 200 g spelt flour (or other flour)
- 150 ml spelt milk (or alternative milk substitute)
- 150 ml apple juice
- 1 apple
- 2 tablespoons sugar or syrup
- 2 teaspoons baking powder
- 1 pinch of salt
- vegetable oil for frying
- Topping of your choice: sugar, dried fruit, nuts, syrup...
Instructions
- Mix flour, spelt milk, apple juice, sugar, baking powder and salt with a mixer to a smooth dough
- Core the apple and cut it into thin slices. Quarter the slices.
- Heat some oil in a frying pan and put the dough into the pan. Press the apple pieces into the dough.
- After about 2 minutes turn the crêpe and heat it up for another 2 minutes
