Strawberry-mint jam

Ingredients
- 1 kg fresh strawberries
- 1 kg jam sugar
- Juice of 1 lemon
- a handful of fresh peppermint leaves
Instructions
Wash the strawberries and put them in a pot. Keep some smaller strawberries aside. Mash the strawberries in the pot to a pulp (e.g. with a potato masher). Add the small whole strawberries again. Add the sugar and the lemon juice. Bring to the boil and continue to cook for 10-15 minutes. Remove from the heat and skim the foam. Add the finely chopped peppermint to the jam, fill into sterilized jam jars and close well.
