Mummentaart
Ingredients
- 250 g flour
- 250 g cold butter
- 250 g curd cheese
- 1 pinch of salt
- 3-4 slightly sour apples (e.g. Golden)
- Raisins (to taste)
- Brown sugar
- Cinnamon
Instructions
1.Add the very cold butter in pieces to the flour and mix with the food processor or knead quickly with your hands. Also knead the curd cheese until a tough dough is formed in which the butter pieces are still visible. Form the dough into a ball and place it in the fridge wrapped in cling film for at least an hour.
2. Peel the apples and cut them into small pieces or slices Drizzle with a few drops of lemon juice to prevent them from turning brown.
Preparation:
Divide the dough into two halves and roll it out into two large circles on a well floured surface with the help of a dough roller. Line a greased cake tin with a layer of dough, place the apple pieces and raisins on top and sprinkle with cinnamon and brown sugar. Place the second layer of dough as a "lid" on top and press both layers of dough together all around with some egg yolk. Spread the rest of the egg yolk on the top of the dough and make some decorative holes in it (this allows the steam to escape during baking and prevents the dough lid from bursting open). Bake for 30 to 40 minutes at 180°C and enjoy lukewarm.
