Minestra with yard beans

Ingredients
- 1 carrot
- 1 onion
- 100 g bacon cubes
- 400 g broad beans (frozen, shelled)
- 1 bay leaf
- 200 g canned tomatoes (small pieces)
- 8 cl white wine
- a piece of Parmesan cheese (about 40 g)
- extra virgin olive oil
- salt
- Quadrucci
Instructions
1. Peel and chop the onion
2. Clean and dice the carrot.
3. Cook the vegetables in a pot with 5 tablespoons of water. Let the water evaporate, add 3 tablespoons of olive oil and fry.
4. Add bacon and fry for about 5 minutes
5. Add broad beans, tomatoes, wine, bay leaf, parmesan and 1 litre of water
6. Season with salt and let simmer for half an hour.
7. Add Quadrucci and cook for about 10 minutes. When the minestra is ready, add 1 tablespoon of olive oil and serve.
